This very popularity has made it a target for counterfeiters, placing it among the top three most counterfeited foods worldwide, along with olive oil and milk. Why is it important to test the purity of honey?

Pure bee honey contains a complex mixture of natural sugars, mainly fructose and glucose, enzymes, antioxidants, amino acids and minerals. When honey is adulterated with substances such as sugar, rice or high-fructose corn syrup, these beneficial compounds are diluted or lost entirely.

For example, in India, the problem is particularly serious. A landmark 2020 investigation by the Center for Science and Environment (CSE) found that the vast majority of honey samples from local brands were adulterated with sugar syrups, reports agriculture. institutes.

Since then, the Food Safety Authority of India, FSSAI, has tightened the purity standards for honey, but enforcement is still a real challenge today. This makes it all the more important that both consumers and beekeeping learners understand the basic methods for purity testing.

How widespread is counterfeit honey

The global honey market is worth billions of euros annually. The difference between the cost of producing genuine raw honey and the price consumers pay for premium honey is large enough to make counterfeiting extremely profitable. And the methods used to adulterate honey have become so sophisticated that simple visual inspection is completely unreliable.

An investigation a decade and a half ago by Food Safety News analyzed honey sold in U.S. grocery stores and found that more than 75 percent of the samples had been ultrafiltered to such an extent that pollen—the main botanical marker used to prove geographic origin—could no longer be identified. Without pollen, there is no way to verify where the honey comes from or if it is indeed genuine honey.

In 2023, the European Commission’s European Food Fraud Network flagged honey as one of the most frequently reported categories of cross-border food fraud cases. Adulteration methods include adding sugar syrups, rice syrup, corn syrup or beet sugar directly to the honey, often in small enough proportions that it is difficult to detect without laboratory analysis. Even honey labeled as organic, raw or monofloral can be adulterated if it has not been independently verified.

Why is honey so easy to fake?

Adulteration of honey is generally done by three methods: dilution with high-fructose sugar or corn syrups, mixing with other substances that mimic the texture and color of natural honey, or deceptive labeling, whereby inferior products are presented as pure honey.

These practices are all the more difficult to detect with the naked eye as counterfeiting techniques have become more sophisticated, with some syrups being refined to withstand even standard laboratory analysis.

For the average consumer, the risk is not only of a financial nature, paying a price similar to that of authentic honey for a product with a much lower nutritional value, but also a health-related one, as counterfeit products may contain additives or large amounts of refined sugars, especially harmful to people with metabolic conditions.

The first step in checking the quality of honey is to read the label carefully. A reliable product should clearly indicate the floral source (acacia, linden, sunflower or manna honey), the region of origin and the manufacturer’s details, plus any certifications. The absence of this information or vague wording such as “mixture of honey from EU and non-EU countries” is a red flag that should prompt the consumer to be more cautious.

What is fake honey and how it is produced

Counterfeit honey ranges from substitutes such as sugar syrup sold as honey, to more sophisticated adulterations where genuine honey is mixed with other syrups or cheaper sweeteners to increase its volume. Thus, costs are reduced, obtaining high profits at the expense of the health of consumers and the work of genuine beekeepers. Common adulterants include:

  • High fructose corn syrup. It is cheap, easy to procure and difficult to detect visually. Mixed with honey in small proportions it is almost impossible to identify without an isotopic ratio analysis.
  • Rice syrup. It is a common adulterant in products intended for the organic market because it can be labeled as organic. It has a viscosity similar to that of honey and is difficult to detect without NMR (nuclear magnetic resonance) testing.
  • Beet sugar solution. It’s essentially beet sugar dissolved in water with added flavorings that can mimic the appearance of light-colored flower honey.
  • Overheated honey sold as raw. Technically, it is real honey, but pasteurized at high temperatures, which destroys the enzymes and phenolic compounds, and is then labeled as raw, meaning honey extracted directly from the combs, unpasteurized. This is probably the most common form of honey fraud, as it is legal in many jurisdictions and difficult to demonstrate without enzyme activity tests.
  • Mixed multi-origin honey sold as monofloral. It is genuine honey from several countries, blended and sold under premium names such as Greek honey, Manuka honey or other single origin varieties.

What tests you can do at home to identify counterfeit honey

Specialists warn that the market is invaded by counterfeit products, many imported, and the average buyer rarely has access to an analysis laboratory when he wants to check a jar of honey bought at the supermarket or the fair. Fortunately, there are some simple tests that can be done at home that don’t require special equipment, providing useful clues about the authenticity of the product. These tests can help identify adulterated honey and provide useful information about the quality of the honey you have.

The water test. Add a teaspoon of honey to a glass of water at room temperature without stirring. Genuine raw honey is dense and will settle to the bottom of the glass, remaining there as a solid mass. Honey adulterated or mixed with syrups tends to dissolve or disperse more easily in water.

The thumb test. Put a drop of honey on your thumb. Genuine raw honey is viscous and will stay put, spreading slowly, while counterfeit honey will spread and flow faster due to its higher water content. Raw honey has a slightly sticky and dense texture unlike counterfeit honey which is thin and watery.

Crystallization test. Leave the honey at room temperature for several weeks. Genuine raw honey will crystallize – the glucose molecules naturally separate from the water and form crystals. Processed or adulterated honey, which has been heated and filtered, is specially treated to prevent crystallization for long periods. If a honey labeled as raw does not crystallize even after being left for several months at room temperature, it means that it is counterfeit. It is important to note that some types of genuine raw honey, such as fir or oak honey, crystallize very slowly due to their high fructose content. This test works better for flower honey.

The flame test. Dip a dry match stick in honey and try to light it. Genuine raw honey, especially forest or manna honey, has a low water content and the match should light relatively easily. In contrast, adulterated honey has a higher water content, which will make it more difficult to light a match.

The vinegar test. Mix a teaspoon of honey in warm water with a few drops of white vinegar. If the mixture foams or bubbles it may mean the presence of added starch or adulterated substances. Genuine raw honey should not produce such reactions in contact with vinegar.

The heat test. Place a small amount of honey in the microwave for 30 seconds. Genuine raw honey will caramelize evenly and take on a golden-brown color, while counterfeit honey with sugars tends to smell like burnt sugar or produce visible granules.

The label test. This test does not require any equipment. Read the label carefully and identify details such as geographic origin (not just “multi-country product”), specific botanical type – fir, oak, thyme (not just “forest honey” or “wildflower honey”), a visible expiration date and lot number, third-party certification marks, and an independent lab certificate (the manufacturer should be able to provide this upon request), notes troyhoney.com.

What home tests can’t tell you

Home tests are useful indicators, but there are certain limitations. Thus, home tests cannot detect sophisticated adulterations, made by adding syrups in small proportions, nor can they verify the geographical origin of the honey.

They are also not able to measure the phenol content, confirm if the honey has been overheated or identify the presence of rice syrup or other adulterants specific to organic products.

The only way to verify the authenticity and quality of honey remains independent laboratory analysis. This involves pollen analysis, which identifies the pollen species present in the honey, thus confirming the geographical and botanical origin. The absence of pollen is, moreover, a clear sign of adulteration.

Added to this is isotopic ratio analysis (IRMS), which detects the addition of C4 sugars, such as corn or beet syrup, by measuring the ratio of carbon isotopes.

The most comprehensive of all is the spectroscopy test, capable of identifying a wide range of adulterants, including rice syrup.

Last but not least, enzyme activity testing measures the levels of diastase and other enzymes, confirming whether or not the honey has been overheated, while a phenolic equivalence test that assesses overall bioactive potency provides additional insight into product quality.
